Sew, let's make... Bread!

I have been sifting (ha ha sifting, bread), through various ways to create a healthier life for  my nearest and dearest. It began with buying loads of fruit and veg, doing up an old bike for my eldest daughter and buying a smoothie maker to name but a few. The next step? You may ask yourself. Well this was my problem I didn't really know many healthy recipes, but whats the fun if your not learning anything new??
I searched the World Wide Web for inspiration and guess what it pulled out all the stops for me... so with what i found i have come up with a bread that i think is the most versatile bread out there, it can be made gluten free, sweet savory, as a scone the list just goes on...
So less of the chit chat here it is my Favorite 'Oat Bread'

Ingredients - Basic recipe
2 yogurt tubs full of oats
500g natural yogurt (i used low fat)
level teaspoon of baking soda
sprinkle of salt
honey
oil - coconut, olive, sunflower etc
Optional - any of the following
2 tbsp Seeds - pumpkin, sunflower etc
1 cup mixed frozen berries
2 tsp cinnamon
1 ripe banana

Method
1. Grease a loaf tin with a light layer of any oil you wish i used coconut oil. and preheat your oven to 180C.

2. Pour all of the yogurt into a mixing bowl, use the same tub from the yogurt to measure out two tubs of the oats and pour into the same mixing bowl.

3. Add the remaining ingredients to the bowl  including any of the 'optional' ingredients and mix thoroughly with a wooden spoon.

4. Spoon the mixture into the greased loaf tin and bake for 35-45 mins or until medium brown. Take the bread out of the tin and put it back into the oven for 5-7 mins to ensure it is not soggy on the bottom.

5. Take it out and let the bread cool on a wire rack.
Slice. serve warm or cool.
