Let's Make ... Energy balls

Hi all,
so as part of my healthy eating buzz I have been exploring clean snacks. I have shared my oat bread buns and oaty granola which are gret if you have a little time to sit and enjoy them but most of the time i am in a rush and running out the door without getting breakfast. With this in mind I  have put together a couple of recipies for Energy Balls.

Energy balls release energy slowly and because of the complex carbs added but also give a boost when using cocoa powder and dates.



Cocoa- nut Balls 8-10

You will need

12 dates/prunes
1 cup almond flour/ground
1/2 cup Shredded coconut + more for the end
1/3 cup coconut oil
1/3 cup cacao/cocoa powder
1Tbsp chi seeds

How to

1. Soak the dates/prunes for 1 hr in Luke-warm water. Drain.
2. In the food processor mix together the dates, almond flour, cocoa powder, coconut oil, shredded coconut and chia seeds. Transfer to a bowl and leave for 20 mins until chia seeds soften.
3. Roll into balls. Once rolled into balls roll around in the shredded coconut. 
4. Cool in the fridge then they are ready.




Peanut butter Balls 10-15

You will need

120g dates/prunes
1 cup rolled oats
1/2 cup shredded coconut
1Tbsp almond flour
150g peanut butter/ any nut butter
water if needed

How to 

1. Soak the dates for 1 hr in luke warm water. Drain.
2. Process the first 4 ingredients in a food processor.
3. Stir in the peanut butter evenly into a dough.
4. Make into balls and roll in oats, nuts, seeds.

** TIP** Stores in fridge for about a week. Also add cinnamon, raisins, seeds, flax anythig really have fun!
