Today is going to be short, I am just checking in to say hey..
I am currently going through some paperwork and hoping to bring something new into the scene this year. I have a few changes that are coming my way and in turn will effect the frequency of my posts! hopefully LOL.

Sew, Let's Make... Turkey Quinoa Casserole
Good morning all
Just popped in to share another great recipe with you all.. its not only got amazing flavour and packed with proteins and minerals this dish looks fab on your plate its full of colourful vegetables and is a great main course.
This meal can also be made in advance so make up a couple of portions of this at one time. It can be eaten cold or heated up, I can not recommend a greater dish...

Turkey Quinoa Casserole
You will need
1 pack turkey mince
1-1 1/2 cups of quinoa (cooked)
4 eggs (2 full, 2 Whtes)
1 Onion
2 Clove of garlic
1/2 cup cheese
3/4 cup Black beans
Salt & Pepper
any veg can be used these are some I used
Courgette/zuchini sliced
Pepper coarsly cut
Sweet corn
Mushroom quartered
How to
1. In a non stick pan sauté your veg and garlic. In a separate non stick pan fry up your turkey mince until cooked.
2. Add the turkey mince, sautéd vegetables and quinoa to a bowl and season with salt and pepper.
3. Meanwhile in a separate bowl whisk up your eggs, when the turkey mix had cooled slightly add in the egg. Stir in very well.
4. Transfer the mixture into a casserole dish press down with a spoon and add cheese.
5. Cook for 35 minutes or until golden.
Serving suggestions
- spinach rocket and avocado salad
- Baked Sweet potato cubes
- Steamed beetroot cubes
Enjoy!!
You can use different vegetables, I try to use different coloured veg to create colour on my plate.

Sew, Let's Make..... Overnight oats
Hey remember me?? I know it has been like forever since we spoke but I am back. I have had a crazy couple of months. As you already knew I took on a full time course while also being a full time mum, some might say that's impossible... and I would say they are fairly correct! lol
Well anyway recently I have been on a healthier journey and if you guys follow me on social media Facebook or Instagram you can see some of my recipes over there. I plan on adding all of those recipes here too over the next couple of weeks for those of you not following me on other social media sites.
Today I will share a very versatile breakfast/lunch idea with you, that i find great as it can be prepared a couple of days in advance, which lets face it we all could do with once in a while. For those busy mornings dropping kids off to school or getting ready for work in a hurry this should help you save time! x

Over night oats
you will need
1/2 cup oats
1T Chia seeds (whole or ground)
1/2T flax seeds (ground is best for me)
1T greek yoghurt (optional
Almond/rice/oat milk (enough to cover oats in bowl/jar)
How to
1. In a mason/jam jar add your dry ingredients and mix a little so all chia and flax do not clump together.
2. If adding yoghurt add now, then cover with the milk of your choice.
3. Cover and leave in fridge overnight*.
Flavour Combos
It is not essential to add flavours but it makes it more exciting, if you choose to add flavour add them just after step 1. The combinations of flavours is endless but if you have no idea where to start here are a few of my favourites:
Piná Colada - 5/6 pineapple chunks with 1t shredded coconut (sugar free)
Nuts about you - 1T peanut butter
Olde Fashioned - 1/2 teaspoon Cinnamon with 1/2 an apple
*Can make 3 portions at once if you find it handier. as it should last 3-4 days.
